Confetti Ice Cream Sandwiches


One of the best attributes of a cookie is its ability to be transformed into another dessert. Perhaps the best transformation comes when you smush two cookies together with a big ol’ scoop of your favorite ice cream. Enter the ice cream sandwich. Nothing beats that dead of summer heat quite like an ice cream sandwich. But frankly, they’re also pretty perfect if you’re just sitting on your couch watching Hamilton for what could very easily be the thousandth time—something I may or may not be guilty of.

Consider this more of a guide and less of a recipe. All you need are your cookies, some ice cream, and a freezer. Extra sprinkles are a welcome, but optional, addition.

These confetti ice cream sandwiches use the chewy confetti cookies from my last post, linked here. I like to use vanilla ice cream and rainbow sprinkles to play on the flavors and colors of the cookies, but you can certainly use any flavor you wish. Strawberry would be delicious and provide a great pop of color.

 

How to:

Line a freezer-safe container or rimmed baking sheet with wax or parchment paper.

Leave your ice cream out for 3 minutes or so to soften if it's really hard. You want the ice cream to be firm and scoop-able, but not so soft that it begins to melt everywhere. Pour your sprinkles of choice into a shallow bowl.


Match up two cookies. Flip one over so that the underside is facing up.



Scoop a heaping, rounded portion of ice cream and place it on the cookie that has the underside facing up. Ideally the scoop will be almost the same width of the cookie.



Place the other cookie on top of the ice cream and gently press together to push the ice cream to the edges of the cookies.





Roll the sandwich through the sprinkles to coat the ice cream if desired.



Place the sandwich into the lined container or on the baking sheet. Wrap with plastic wrap or close the container to prevent ice from forming on the sandwich. Freeze until firm, at least 2 hours, but best overnight.

Once frozen, go enjoy your fun new treat!
